HI, I'm Doreen Lyon and today I'm going to
show you how to make maple lollipops, one of the recipes in my book Recipes from a Maple
Queen. We're going to need the following ingredients:
a cup of maple syrup, a cup of corn syrup, a cup of white sugar, a candy thermometer,
a small saucepan, lollipop molds, sticks, and bags. I have already prepared the lollipop molds
by lightly spraying them and inserting the lollipop sticks, and I have set them aside. And now I'm going to combine the ingredients
in a small saucepan.
A cup of maple syrup, a cup of corn syrup,
a cup of white sugar, and I'm going to mix this in a little. This will melt as it gets
hotter. I'm going to insert the candy thermometer,
and we are
going to cook over medium heat until it gets to 300 degrees. It's important to not leave your syrup unattended
as it could boil over or it could reach a temperature too high.
Once your syrup reaches 300 degrees transfer
it to a spouted glass measuring cup capable of withstanding high temperatures. Ok, now you are going to let this cool to
270 degrees, remove the thermometer, and immediately pour into the prepared lollipop molds. When finished you can clean your utensils
by boiling in hot water. I prefer to get my lollipop supplies from

After filling the molds, let them sit at room
temperature until hardened. Remove from the mold and immediately place
